How it works

Professional brewers typically use a steam jacket to disperse heat more effectively and prevent hot spots created by direct flame heating.  Direct flame heating changes the flavor of you product which is sometimes desired for example grilling. But in brewing, most of the time it is undesired.  The diagrams below depict how the Heat Guide reduces sugar carmelization, saves energy and reduces brew time.  The Heat Guide utilizes the energy that is already present and prevents additional heat loss through convection and radiant heat escape.  It effectively quadrupedal the area on with heat is transferred from the hot gasses to the cooking kettle similar to a steam jacketed kettle.  This is as close as one can get to the professional steam jacket method without dropping thousands of dollars.
